How can I do to completely delete some of those “roles”? Which ones I should “never” delete?

I don’t think you need to delete any of them you just choose to map them to users or leave blank. All are useful, but I’d say cohort creator, cohort reader, concept set creator are all covered by Atlas users. I haven’t yet had use for Moderator, but it depends on your org. You may want someone to go in and fix users’ study assets. But often not.
