Can the CDM mapping exercise be carried out on a source database with some of the fields pseudonymised?

I wanted to ask for some community input on whether it would be best practice to do the OMOP CDM conversion on a source database which might have some of its fields pseudonymised?

Best practice is to ETL from as close as possible to the original source data.
